Also, here’s a look at my husband’s plate from last night, complete with a sneak peak of the LASAGNA PIZZA! Best three hours I ever spent in the kitch, I tell you what. 180+ minutes to make, less than 8 minutes to eat. NO REGRETS.

Pizza with Mozzarisella! It’s the only vegan cheese I’ve tried so far that melts on pizza (no daya in Italy :/) and I was quite impressed with the texture and the flavour :) I was lazy so I topped a spelt pizza crust I had bought with tomato sauce, mozzarisella, tofu wurstels, sweet corn, zucchini, red peppers, onion and black olives that I had previously stir-fried… so good!

Pizza with Mozzarisella! It’s the only vegan cheese I’ve tried so far that melts on pizza (no daya in Italy :/) and I was quite impressed with the texture and the flavour :) I was lazy so I topped a spelt pizza crust I had bought with tomato sauce, mozzarisella, tofu wurstels, sweet corn, zucchini, red peppers, onion and black olives that I had previously stir-fried… so good!

Non CSA: Local Tucson Vegan Pizza!!!!
If you read before, my little love of my life dog was diagnosed with IVDD and had major (expensive) spinal surgery. It’s been a really hard time for us, and why I took a break from updating.  It’s hard to feel inspired to cook when there’s a lot on your plate (har har) but it’s pretty impossible to stop cooking when you’re follow a vegetarian, and especially, vegan lifestyle. One day I was looking through our junk mail and found the flyer for Fresco Pizza, I’ve seen it before, but this time I noticed one of their specialty pizzas called the “Very Vegan” They have soy mozzarella! WOO. It was a huge splurge but we ordered the specialty pizza (without roasted red bell peppers) and watched RuPaul’s Drag Race. It was great, and as you can tell COVERED with veggies! Almost too many veggies. We liked the cheese they used, which is saying something since we’re still adjusting to vegan cheese, so I’ll have to ask what brand they use next time I order from them.

broccoli salad calzone….sounds strange, tastes amazing

i start with making my own crust, and its just a simple recipe of whole wheat flour, water, sugar, yeast etc etc… then i add basil, oregano and a little bit of dill to liven it up!   

for the filling i make broccoli salad; i dont use measurments, just kind of throw it together how i like it, but i use broccoli, sunflower seeds, raisins, onion, vegan mayo, and a touch of agave nectar, then add garlic powder and salt and pepper… so flatten out the dough, add chunky marinara sauce, broccoli salad, zucchini slices and some pepper jack flavored almond cheese… bake in the oven around 400 until the dough is starting to brown on the outside.. let cool and munch out :D
