V pizza

My sister and I fucking love pizza. We’ve eaten it 3 times this week. We made this one and it was quite nice. Yeast-free crust, large handfuls of spinach, some boca crumbles (I thought it was a bit weird, but not bad), some onion, lots of red/yellow peppers, and our spicy tomato sauce. Still drooling just thinking of it.

My vegan pizza for vegan pizza day! It’s made with a crunchy whole wheat crust (whole wheat flour, nutritional yeast and flax). The sauce is a barbecue tomato sauce - topped with yellow peppers, daiya and summer squash right from the garden!

Why make one big pizza, when you could make four mini ones?! This was probably one of the funnest dinners I’ve ever made. My friend Erin and I came up with a few ideas, improvised a lot, and this was our end result.
PIZZA ONE: Simple Pesto
Pesto sauce, cherry tomato slices and thinly sliced basil
PIZZA TWO: Summer Sizzlin’
Olive oil, mango chunks, red peppers, green peppers and yellow peppers
PIZZA THREE: Greens on Greens
Pizza sauce, wilted spinach and asparagus with extra garlicPIZZA FOUR: DESSERT

Yellow bell pepper, onion, and tomato with uncheesy sauce and Daiya on a whole wheat tortilla crust plus lots of oregano.

We made Pizza!
We made vegan pizza! this is a HUGE thing for me! I haven’t had pizza in over a year and it brings with it memories of eating my housemate’s leftover out to the bin and horrid purging experiences… So being happy to make and eat pizza was a big step! It was really nice :) We used pre-made bases, tomato puree, peppers, mushrooms, tomato and courgette :D
