Radicchio Pizza with Truffle Oil from Alicia Silverstone’s cookbook The Kind Diet.
This was soo yummy and easy to make. I bought vegan ready to bake pizza dough and toasted the crust for a few minutes. Then I sliced some radicchio into thin ribbons and tossed it with olive oil, salt and pepper, a drop of truffle oil, and fresh herbs. I topped the pizza with it and added some Daiya vegan cheese. The recipe doesn’t call for the cheese but it tasted great. Mine isn’t as pretty as the books but it was great.

White Pizza w/Broccolli and Roasted Garlic
Made with vegan ricotta mixed with italian seasonings, salt, and truffle oil, daiya mozzarella, roasted garlic, and blanched broccoli on top. The crust was brushed with left over oil from roasting the garlic.
