Vegan Tortilla Pizza
2 large tortillas
Daiya mozzarella cheese 
Marinara sauce
Mushrooms (I used crimini, your choice)
Red peppers
One tomato
Basil 
Canola oil cooking spray 
The result of being broke and working with what you’ve got. Even though this pizza recipe screams haggard college high-dea, it actually makes an awesome snack or appetizer if you slice it up for a party. Place one tortilla on a pan with canola oil spray. Sprinkle a generous amount of Daiya on top of the tortilla, place the second tortilla directly over this. Once cooked, the cheese acts like glue, holding the two together and making the pizza less likely to crumble after being baked. Lightly spread marinara sauce on top of second tortilla, followed by more Daiya. Thinly slice veggies and throw on top with fresh basil. Bake at 350 degrees F for 12-15 minutes.

Want a pizza but don’t feel like dealing with dough?  Try this super simple and fast pizzadilla.

2 tortillas

1/2 small yellow onion, diced

1-2 cloves garlic, minced

1-2 kale leaves, stems cut out, rolled, then sliced into ribbons

1 small tomato, thinly sliced

daiya cheese (or any shredded cheese alternative)

a couple pinches of nutritional yeast (optional but highly recommended)

pinch thyme

pinch marjoram

salt and pepper

1) Slowly saute onion in olive oil over medium heat, stirring occasionally until browning, as shown.

2) Add garlic, stir a little, then add kale.  Saute until kale is wilted a bit.

3) Season with salt and pepper to taste. Place in small bowl on the side

4) Wipe pan with paper towel to remove oil.

5) Place tortilla in pan, put a layer of cheeze sprinkled with a pinch or two of nutritional yeast on the bottom, spread tomato slices out then top with kale and onion mixture.  

6)Sprinkle thyme and marjoram an finish with another layer of cheeze and nutrional yeast.  Cover with other tortilla.

7) With the heat still at medium, let it sit for about 3-4 minutes.  (putting a bowl with a can in it on top to press the quesadilla is recommended)  Flip and repeat.

8) Remove, let rest about 30 second, slice and serve!

My pizzadilla, inspired by Pinterest. 

I took a whole wheat tortilla and spread tomato sauce on half, then added Daiya “cheese” shreds, basil, oregano, garlic powder, mushrooms, onions, and green pepper. I folded the whole thing in half, then baked in the oven for 15 minutes at 400 degrees Fahrenheit, flipping halfway through. 

It was warm, gooey, cheesy… I could go on and on.

Not only are we highly stoked on the concept of Vegan Mexican Pizza, but we also have much respect for a recipe that includes the phrase “Bake that sucka.”

Vegan Mexican Pizza
Take an ordinary flour tortilla. Fry if you want to be unhealthy. Otherwise don’t.
Take a can of red kidney beans or black beans - plain ones. Mush them. Add plain chipotle powder while heating. Add plain tomato puree if you’d like. 
Spread beans on tortilla. 
Top with shredded lettuce & a tomato salsa consisting of lemon juice, salt and black pepper topped with cilantro and green chilies and even mangoes if you got ‘em.
Add Follow Your Heart vegan cheese to the top. 
Bake that sucka if you’ve not fried the tortilla until cheese melts. Keep an eye out for burning. 325 degrees in the oven should be more than enough. You can even nuke the sucker in oven mode.

I made a tortilla pizza for lunch! :D it was so quick and easy and tasted great :) here’s how (not that it really takes much instruction!)
Spread tomato purée over a tortilla (something like BBQ sauce would probably also be tasty! And flavoured tortillas would work… I saw some garlic ones in Aldi today… Garlic pizza bread!) then load it up with whatever you fancy! I used sweet corn, mushrooms and cherry tomatoes, as well as some mature cheddar style Cheezly. You can be as adventurous or as simple as you like, this would work wonderfully with thing like rocket, olives and some oil, or a medley of mushrooms… Whatever you want/have laying around in the fridge really!
I put it in a tray and stuck it in the oven for about 10 minutes at good old gas mark 6. After 10 minutes as you can see the edges that didn’t fit in the tray properly are slightly browner than the rest but are by no means burnt. I then put the tray under the grill for a couple of minutes to try and melt the cheese a little bit more.
And hey presto! Dinner is served! :)
I am going to try rolling the wrap up next time to create a sort of pizza roll (I had a 3 cheese rolled up pizza affair from a cafe half way up a mountain in France last month and I’ve been thinking about it ever since! A true holiday romance!) but that may take a little more experimentation with cooking methods… I’ll keep you posted! ;)
