Pizza! 

On the left, Mexican-style Taco pizza: refried beans, salsa, onions, red peppers, black olives, avocados, corn chips and cheese sauce!
On the right, Italian-style Margheritaish pizza: tomato sauce, cheese sauce, daiya, black olives, red pepper, onion and tonnes of fresh basil!  

And hot agave mustard because I’m crazy for that stuff.

So, last weekend I met my best friend in Grand Rapids for a concert.  We decided to stay the night and I was super excited because this meant we would get to explore GR for lunch options.  We decided to go to Brick Road Pizza Co. and I am very happy with that decision.  We each decided to get a pizza so we could share and also have enough to take home!  She got the BBQ Tofu Pizza which had BBQ sauce, BBQ tofu, green pepper, onion, roasted corn salsa, avocado, cilantro and Daiya on it (she decided to hold the tempeh bacon).  I ordered the Vegan Deluxe which had red sauce, seitan pepperoni, tempeh sausage, onion, green pepper, mushroom and Daiya.  GLORIOUS.  It was a little pricey, but it was so good… and let’s be real, pizza is my favorite.

A delicious Mexican-inspired pizza loaded with refried beans, avocado, salsa, onions, bell peppers, tomatoes, jalapeno peppers, and some kind of spicy sauce. I got this when I was in Queenstown, New Zealand at a place called Hell Pizza. All their pizzas were called things like the seven deadly sins, brimstone, purgatory, etc (hell-related) - this vegan one was called ‘Sinister’. It was so yummy!

Not only are we highly stoked on the concept of Vegan Mexican Pizza, but we also have much respect for a recipe that includes the phrase “Bake that sucka.”

Vegan Mexican Pizza
Take an ordinary flour tortilla. Fry if you want to be unhealthy. Otherwise don’t.
Take a can of red kidney beans or black beans - plain ones. Mush them. Add plain chipotle powder while heating. Add plain tomato puree if you’d like. 
Spread beans on tortilla. 
Top with shredded lettuce & a tomato salsa consisting of lemon juice, salt and black pepper topped with cilantro and green chilies and even mangoes if you got ‘em.
Add Follow Your Heart vegan cheese to the top. 
Bake that sucka if you’ve not fried the tortilla until cheese melts. Keep an eye out for burning. 325 degrees in the oven should be more than enough. You can even nuke the sucker in oven mode.

My Easy Vegan Pizza

  • Lavash pita bread
  • Organic salsa
  • Daiya mozzarella shreds
  • Fresh Tomato slices
  • Fresh spinach and mint leaves

Just spread salsa to the pita bread, garnish with Daiya “cheese” and top with tomato slices, spinach and mint leaves. Heat the oven to 350 F. Take out the pizza when “cheese” is melted and and pita slightly browned and crispy
