Potato Spice Pizza
I actually made the dough from scratch. It was hard work! Lol, I did not expect to put so much effort into making dough. Toppings were: potatoes, onions, garlic, thyme, rosemary, olive oil.
It was better than yesterday’s meal by far. I found it very heavy though, too much carbs but very good nonetheless.

MexItalian Rosemary Focaccia Pepper Pizza



Hello fellow animal-free (vegan) pizza mongers.  I made this last night.  I only intended on eating one or two slices.  I ate the whole thing.  It’s what I call a MexItalian Rosemary Focaccia Pepper Pizza.  The ingredients include: rosemary focaccia dough, Galaxy brand vegan mozzarella cheese slices, diced organic tomatoes, fresh organic jalapeno chili slices, yellow onions, oregano and corn meal.

This is one of my most favorite animal-free (vegan) creations.  A culinary delight for the ages.  It boasts a light cornmeal coating on the bottom of the crust, no cholesterol, low fat, no saturated fat, low sodium and an abundance of overwhelmingly awesome taste and texture.   It came out like cross between pizza and bruschetta with a Mexican kick.  The smiley face in the jalapeno pepper is compliments of the Universe.  :-)  (Last year I found one in a freshly poured mug of beer).

Vegan pizza made at my friend’s house. I made the dough from scratch (70% plain flour, 30% self-raising flour, active yeast, salt, olive oil, sugar water to activate the yeast, left to rise in a warm place) topped it with tomato sauce (tomato paste, ketchup, mixed herbs, garlic paste, sundried tomato marinade, tomato juice, salt) broccoli, black olives, bell peppers, mushrooms, red onion, jalepenos, sweetcorn, sliced tomatoes, rosemary, thyme and two types of vegan cheese (Tesco strong soya cheese, Redwood Mozzarella style Cheezly). Here in the UK we don’t have fancy things like Follow Your Heart or Daiya but we make do.
I sprayed the whole thing with low-calorie olive oil spray before I put it in the oven. Had to frazzle it to cook the middle with all those toppings :P. We made other pizzas not pictured with asparagus and marinated tofu. YUMMY!!!!
