Prebaked the pizza dough for 5 minutes. Mixed tomato taste with water and herbs over low heat. Made 1 lb. of mac on the stove and mixed in Daiya block (cut into small pieces) over low heat. Spread tomato sauce, then macaroni on pizza crust. Baked for 10 more minutes. Delicious!!! hrrrrrrrrrrrrrrrrrrng!

Also, tonight I was supposed to go hang with my co-workers for our weekly game night, so I made a bunch of vegan mac n cheese for these ~mac attack~ mini pizzas, and then it got cancelled! Now I just have all this mac n cheese and 10 english muffins, but nowhere to go. So I’m just going to eat a lot of them, drink wine, and and watch civil war documentaries while I take a bath.

So I totally forgot to post the mac & cheese pizza we made last week! This one’s using the “Mac Daddy” recipe from Veganomicon - it features nooch and other good stuffs instead of processed cheese,* so it’s a little healthier - and is topped with breadcrumbs. The dough didn’t quite rise enough, but the pizzas were still delicious. (Pizza #2 being the orange food groupie one!) Too bad Shane wasn’t home to try it - he had to rush Jayne to the animal e.r. after she was bit by a woodchuck she managed to corner in the yard. She’s had all her shots, so she’ll be okay, but he tore a decent sized hole in her chest. (You could literally lift up a flap of skin and see her meat. And she never even flinched! That’s our Jayne Cobb, Hero of Canton!) Of course this all happened just as the pies were going in the oven. Jayne, your timing. * Not that I have anything against processed vegan cheeses, mind you. ** Don’t worry, the hat’s vegan too!
