A batch of the vegan parmesan from Lane Gold’s Vegan Junk Food. Just combine some nooch, walnuts, and olive olive in a food processor and pulse until chopped and blended. Put it on a pizza! Simple and delish!

You guys! Allow me to introduce you to the Baked Ziti Pizza from Lane Gold’s Vegan Junk Food, minus the ricotta. (We were fresh outta tofu, doh!) Super-yummy and probably easier to make than my own version.
But eating it? Every bit as messy! Next time I think I’ll try it with a more bite-sized pasta; elbows, maybe?

I have a deep fryer and there isn’t much I haven’t attempted to deep fry.” YUM. I bought a deep fryer last year but so far I’ve only used it on the usual suspects: french fries, mozzarella sticks, pierogies, that sort of thing. A few times I’ve considered deep-frying a candy bar, but it scares me a little. I’m afraid I won’t be able to stop. Deep fry ALL the things!

And well we’re in Portland eating vegan junk food, how about some poutine?” Every time I spy vegan doughnuts on my dash, I drool on myself a little. Alas, I’ve only ever had the pleasure of eating Ronald’s Donuts (le sigh). Happy aside: there is a baked donut hole recipe in Vegan Junk Food! (Note to self: try deep frying a ball or two.)

When I saw the pizza & bread chapter, I knew I had to hit Adams Media up for a review copy, and they were nice enough to comply. Though Vegan Junk Food was released in mid-December, and I first contacted the publisher way back in November, it wasn’t until late January that I received my copy. The book’s proven so popular, you see, that it’s been on back order. Yay vegan junk food!
I haven’t had time to try out many of the recipes yet, but this past weekend the husband and I made the Pesto Chicken Pizza with Creamy Garlic Sauce. A.MAZE.A.BALLS!, y’all! The garlic sauce - actually pureed white beans - tastes like garlicky mashed potatoes. I could seriously eat it as its own meal, it’s so yummy.
All of the recipes look so delish that we had trouble choosing just one, but our lack of ingredients helped to narrow it down. (Seriously, we were short of one or two ingredients for nearly every pizza recipe. THE LUCK.) The Black Bean Taco, Thai, and Meatball pizzas are next up on our list!

inwiththenoose asked: Got any tips for reheating pizza? I know that it will never be as good as fresh, but I've tried everything from the obvious oven to a cast iron pan to reheat and it never seems to get both the "cheese" back to a melted state and the crust warm/"crispy"
I almost always reheat my pizza in the toaster oven (or oven, if it’s more than a few slices) at 425 F for ten minutes or so. Of course the cheese never gets as melty as the first go round, but it usually gets warm and gooey at least. I find that it helps if you only cook the crust to a light, tannish brown color initially, ‘cause then you can reheat it for a little longer without worrying about scorching it. The cheese needs that little extra push, I think.
