I’ve been craving carbs lately, so I attempted to assuage my desire
for bread with a taco pizza!
Preheat your oven to 400F and prepare a pizza crust. Brown:
2 cloves garlic
1/2 T oregano
Careful not to burn it, they’re quickly cooked.
Drain, rinse and add:
15 oz beans
1/4 C water
I used a can of kidney beans, as they’re my favorite, but black beans
should do just as well!
Cook until reduced, then remove from the heat and mash into a paste.
Spread across the crust and top with your favorite taco stuffers! I
used:
3 tomatoes
some shredded Daiya (cheddar AND havarti!)
handful of shredded lettuce
Bake for about 15 minutes.
