This is my first attempt at a vegan pizza! Thanks for the inspiration. The crust is a chickpea flatbread from a recipe from the Melomeals: Vegan for $3.33 a day, and the cheese on the pizza is an herbed tofu cheese from a recipe by Toni Fiore by way of delicioustv.com. The toppings are stuff I had around that I thought would taste good together, and they really did: sundried tomatoes, roasted butternut squash, and red onion. Hooray!! It was tasty and I’m going to make so much more. YUM!!
