Vegan Chicago Style Deep Dish.

This is the traditional cheese on the bottom, thick cornmeal dusted crust, bubbling hot garlicy tomato sauce, slightly charred Parmesan cheese topped, spinach pizza from which all deep dish pizzas descend from. Made with of Kaas Soy Mozzarella and Galaxy Vegan Parmesan this pizza has evolved. It is as close as one can get to the Traditional Chicago Style Pizza without being in the Windy City, of course finding a vegan version in “The Hog Butcher to The World” is close to impossible. This one was made on Vashon Island, WA and was made to cheer up my sweetheart who was having a bad day.

Another quasi-pizza-related link. I made Pizza Burgers from Cooking with Trader Joe’s Skinny Dish (vegan TJ’s cookbook!). A link to my review/description here! It’s quinoa and kidney beans mixed with Italian-inspired seasonings and marinara, formed into a patty of delicious deliciousness. I topped with mozz and more marinara because… hello pizza!
Combines two great loves… but seriously, I am wondering why I haven’t made just pizza yet!

The husband’s Buffalo Wing pizza, enjoyed over the weekend: red sauce mixed with Frank’s Original Red Hot Sauce; Boca Chik’n patties, also flavored with hot sauce; and Galaxy Foods’ vegan cheddar rice cheese. Recipe here.
I made this bad boy yesterday on the grill, complete with artichokes, asparagus, mushrooms, and fresh garden grown eggplant. Cento tomato sauce (vegan friendly) and Galaxy Foods shredded cheese round out this otherwise, fantastic pie.
