fuck yeah vegan pizza

Look at this FN pizza slice!

“on my recent trip to NYC”

I endeavored to join a good friend (and old flame) in his new neighborhood (brooklyn) for a wonderful & sunny Sunday afternoon visit and amazing food.

First stop, Vinnie’s

There aren’t many shops in MTL who offer vegan cheese toping options. I usually get a cheese-less (and obviously meat-less) pie downstairs and drop a shit ton of dayia on it then reheat it just enough for the cheese to melt. Therefor I was über excited to get me some pizza.

They had quite a selection of vegan options (mind you, this is not a strictly vegan pizza joint) AND they carry vegan treats! (PHILLY!!<3)

It wasn’t hard for me to make a choice, they had me at mac & cheese pizza slice. I could’ve eaten 3 different kinds, if i wanted, but I knew we were going to be eating much much more later on (and drinking Tullie at Lucky Dog).

This slice was mac & cheese, pretend ground beef and hot sauce and all sorts of other wild things I can’t recall because honestly, like i just said, they had me at mac & cheese. I’m not big on hot sauce but on that day, I couldn’t have cared less.

It was DELICIOUS.

As a matter of fact, could one of youz overnight me a buncha slices… ktxbye

Just an FYI, they are welcoming new Dharma Initiative recruits…

Mac and cheese is the new bacon! At least that’s what the HuffPo told me a while ago but I think it’s totally true. Which is great for us vegans now that vegan cheese is so legit! Enter: the mini mac and cheese pie from Mighty Vegan! On a scale from “omg so much” to “I’d trade my significant other,” how much do you want one?

SPEAKING OF PASTA. The other night I decided to try a mashup of a pita pizza and a mac & cheese pizza, using some leftover baked macaroni I had in the fridge. Not bad, though the crispiness of the baked pita bread was a little disconcerting when paired with the tenderness of the twice-baked pasta. Probably this should go on a nice thick crust pizza, like the original macaroni and cheese concoction?
Still, an inspired way to use up leftovers. (What’s that? Got some extra chocolate chip pancakes? PUT ‘EM ON A PIZZA! P.I.Z.Z.A.!)
Updated to add: The recipe is rather self-explanatory, but here you go!
