Gluten free, vegan pizza in preparation/procrastination for final exams!
Crispy cornmeal crust, topped with sliced tomatoes, artichokes, slivers of onion, zucchini, corn, black beans, roasted garlic, various ground herbs, sea salt, and (of course), daiya mozzarella. Drizzled with balsamic vinegar and evoo. So good.

Two homemade pizzas with alternating sauce placements.
Cornmeal and spelt crusts, capsicum pieces and some baller portabello slices, homemade fat-free tomato and capsicum pizza sauce and of course, the ever lovely, ever glorious Daiya cheese.
These pizzas were enjoyed on the floor in front a home screening of Pirates of the Carribbean 4, but we didn’t actually get through the movie because of the vegan pizza food coma that followed. I did wake up in time to eat the last slice of deep dish, however.

Vegan Chicago Style Deep Dish.

This is the traditional cheese on the bottom, thick cornmeal dusted crust, bubbling hot garlicy tomato sauce, slightly charred Parmesan cheese topped, spinach pizza from which all deep dish pizzas descend from. Made with of Kaas Soy Mozzarella and Galaxy Vegan Parmesan this pizza has evolved. It is as close as one can get to the Traditional Chicago Style Pizza without being in the Windy City, of course finding a vegan version in “The Hog Butcher to The World” is close to impossible. This one was made on Vashon Island, WA and was made to cheer up my sweetheart who was having a bad day.

Cadry made this Hawaiian pizza on a cornmeal crust. It’s topped with fresh pineapple, yellow bell peppers, red onions and buckwheat/adzuki bean bacon. After it was baked and toasty, I added cool avocado, jalapeños, and hot sauce.

Cornmeal crust pizza with Teese Mozzarella Cheese and Uptons Naturals seitan sausage, spinach and peperoncini.
Tried something slightly different tonight. Instead of shredding the Teese I put it on in slices. Just looking for a visual change really. Nice quality dinner tonight.
Capped it off with half a chocolate cookie from Chicago Diner while watching Glee. Dorky night!
