delicious vegan pizza! made with Cheezly super melting cheddar style, and marinated tofu… sweetcorn and mushrooms too, however you can’t see them =Pbase was storebought - the only kind i can ever find, and luckily enough it’s vegan! sauce was also storebought - just a standard pasta sauce that happened to be vegan.
when i make these, they’re actually really hard to eat, because they’re so loaded up with deliciousness!

i celebrated vegan pizza day by gifting this entire pizza to my stomach. broccolini, red onion, corn, eggplant, mushroom, and sundried tomatoes on thin crust. it was soo0OOO GOOD and i almost forgot to take a picture before i started inhaling it in my car (there was no way i could wait until i got all the way home to experience this delicious pie)

Dinner last night! Tomato sauce, mushroom, sweetcorn, sundried tomato, black olive, red pepper, rocket and Tesco soya medium cheese, with a bowl of Tesco cheddar style cream cheese to dip the crusts. :D

Vegan pizza made at my friend’s house. I made the dough from scratch (70% plain flour, 30% self-raising flour, active yeast, salt, olive oil, sugar water to activate the yeast, left to rise in a warm place) topped it with tomato sauce (tomato paste, ketchup, mixed herbs, garlic paste, sundried tomato marinade, tomato juice, salt) broccoli, black olives, bell peppers, mushrooms, red onion, jalepenos, sweetcorn, sliced tomatoes, rosemary, thyme and two types of vegan cheese (Tesco strong soya cheese, Redwood Mozzarella style Cheezly). Here in the UK we don’t have fancy things like Follow Your Heart or Daiya but we make do.
I sprayed the whole thing with low-calorie olive oil spray before I put it in the oven. Had to frazzle it to cook the middle with all those toppings :P. We made other pizzas not pictured with asparagus and marinated tofu. YUMMY!!!!

You can be as adventurous or as simple as you like, this would work wonderfully with thing like rocket, olives and some oil, or a medley of mushrooms… Whatever you want/have laying around in the fridge really!
I put it in a tray and stuck it in the oven for about 10 minutes at good old gas mark 6. After 10 minutes as you can see the edges that didn’t fit in the tray properly are slightly browner than the rest but are by no means burnt. I then put the tray under the grill for a couple of minutes to try and melt the cheese a little bit more.
And hey presto! Dinner is served! :)
I am going to try rolling the wrap up next time to create a sort of pizza roll (I had a 3 cheese rolled up pizza affair from a cafe half way up a mountain in France last month and I’ve been thinking about it ever since! A true holiday romance!) but that may take a little more experimentation with cooking methods… I’ll keep you posted! ;)
