Vegan buffalo wing pizza with blue cheese crumbles.
I adapted the following recipe, http://keepinitkind.com/buffalo-cauliflower-wing-pizza-with-tofu-blue-cheese-spread. I used a regular pizza sauce mixed topped with daiya and the blue cheese crumbles then topped with the cauliflower buffalo wings covered in Wegman’s buffalo wing sauce.

It’s time for some Mini Pizza Pies! These little pizzas are fun, kid-friendly and most importantly, DELICIOUS!

Cauliflower Base Pizza
Ingredients: (1 pizza)
1 Raw cauliflower
500 grams of Soy Cheese, grated (reserve about 1/4 for topping)
3 tbls of ground flax meal.
1 tsp dried oregano
1 bunch of fresh basil
3 tbls tomato pizza sauceMethod:
1. Preheat oven to 180 degrees Celsius
2. Prepare flax meal to create a ‘flax egg’ by stirring 3 tablespoons of ground flax meal into 9 tablespoons of hot water.
3. Cut one raw cauliflower into pieces and grate or ‘rice’ using a food processor, use a paper towel to press excess liquid from the cauliflower.
4. Transfer to a bowl and mix in grated soy cheese, flax ‘egg’ mixture, oregano, salt & pepper.
5. Coat a baking sheet with cooking spray or olive oil, press mixture into the baking sheet in a flat round crust shape
6. Bake for approx 20 minutes, or until golden.
7. Remove and spread with pizza sauce (leaving a border for the crust), top with soy cheese.
8. Place back into the oven until the cheese has melted, remove and top with fresh basil.
Serve!

LASAGNA PIZZA! Don’t ask me why I decided to make such a labor-intensive pizza on a day when the heat index topped 100F –
so much sauteing! and the boiling! hot noodles! please dog just let me crawl into a hole filled with ice cream and die!
– but I did and it was totally worth it. Best pizza I’ve had in a while. 180+ minutes to make, less than 8 minutes to eat. NO REGRETS.
Inspired by a pie from Ian’s that I spotted on tumblr, this pizza sports a layer of lasagna as I typically make it: namely, filled with tender, sauteed goodness like mushrooms, garlic, carrots, zucchini, and cauliflower. And cheese. Mozzarella Daiya as far as the tongue can stretch!
To wit, a cross-section:
