Roasted Eggplant, Green Pepper and Sundried Tomato Pizza
My first pizza on the new pizza stone and I just have to say WOW. The pizza stone is like a little heat-collecting miracle! The crust was the crispest ever and the whole pizza just baked wonderfully.
I made a cheater’s pizza sauce for this that came out really well—a can of diced tomatoes with some olive oil, kalamata olives, nutritional yeast (for cheesy tang and a little extra B12 vitamin), salt, pepper and garlic in the food processor and it was done. On top of that I layered a vegan ricotta that I made with a 50/50 tofu, FYH “cheese” mix, lemon and spices and on top of that, chopped roasted eggplant, sundried tomatoes, green pepper, garlic, cracked red pepper and vegan parm.
SO MUCH YUM.
