Vegan Mini-Pita Pizzas
These lil’ fellas are my go to dinner when I want somethin’ tasty and quick. I buy my mini whole wheat pitas for $1.89 at Whole Foods, top it with a little tomato sauce, red onion, spinach, and Daiya dairy-free cheese. Daiya is God’s gift to vegans, by the way. It melts. And also does not taste like Styrofoam. It’s glorious. Also if I have it on hand, I like to top these little guys with some sliced mushrooms or thinly sliced bell pepper. Keep everything sliced really thin to ensure a quick cook time. I just pop ‘em into my toaster oven (turning on the conventional oven in Alabama during the summer is a near death sentence) for a few minutes until the Daiya melts and then voila! Served along side a mixed greens salad with balsamic vinaigrette and some fresh cantaloupe (which I’m obsessed with and I’ve discovered I can eat a whole cantaloupe myself in one day, one). Anyway, these are super tasty and make my tummy happy.
