Hey peeps, my birthday dinner made it onto vegan.com! Not quite as hot as winning the VegNews award for “vegan food most likely to induce a heart attack upon ingestion,” but that’s okay. A pie’s gotta start somewhere!
This one, by the by? It’s a MAC & CHEESE PIZZA! Yeah, you heard me right. Carbs layered on carbs, topped with carbs and served with a side of carbs for easy dipping. WELCOME TO MY LIFE!
Recipe coming soon, but basically it boils down to this: make a basic fluffy white pizza dough, using this recipe (or the the recipe of your own choosing). Once the dough is spread out, coat lightly with olive oil or a cooking spray and a light dusting of cheddar Daiya. Top with the vegan mac and cheese dish of your choice (the soupier the better; we used a recipe similar to this one, in which the cheese is a 50/50 split between Daiya and Follow Your Heart - my favorite mac & cheese cheese combo, hands down) and bake at 425 degrees for 15 to 20 minutes.
