Vegan MoFo: Ted’s Mini Pizzas

In the episode “Ted,” Buffy’s mother, Joyce, begins dating a new guy named, uh, Ted (played hilariously and impeccably by John Ritter), whom everyone adores because he’s charming and nice and makes really good mini pizzas. Buffy is suspicious of him, though, and in the end it turns out that he’s actually a sadistic, women-hating robot. No bigs.

Back to the pizza. Early in the episode, Ted is serving up mini pizzas to the gang (except for Buffy, who wants nothing to do with him or his pizzas) and Xander rants and raves and asks Ted what his secret is, to which Ted replies:

After you bake it, you fry it in herbs and olive oil, but you gotta use a cast-iron skillet. No room for compromise there.

This sounded like an amazing idea, so the other night I set out to making mini pizzas a la Ted. The pizzas consisted of dough from the Whole Foods deli (which is my go-to dough; I never bother making it from scratch anymore because I really dig this stuff), Muir Glen sauce, FYH mozzarella, zucchini, garlic, cherry tomatoes, and chopped shoshito peppers. Per Ted’s orders, when the pizzas were done baking (and after I had broiled them for a minute so the FYH would get nice and melty), I pan fried them in my cast iron in olive oil, basil, thyme, and oregano.

Y’all, let me just tell you, these were so delicious. The crust was so perfectly crisp and zesty and just the right amount of greasy. That Ted fella may have been a sociopathic robot, but he was also a culinary genius.
