I had this thing of beauty for dinner tonight.
Mellow mushroom pizza with red sauce, black olives, spinach, tofu, tempeh, mushrooms, and Daiya cheese.
I have no idea what the calories are (I estimate around 500-600 for the two slices I ate). Whatever it might be, I’m sure it’s fine because I still had 1000 calories left over before dinner. I shared the pizza with a friend, but that still left me with two slices to take home. I can’t wait to have some tomorrow!
