Somehow, this new Galaxy shredded mozzarella ended up in my Earth Fare basket a few days ago. I was really curious to try it…mostly to see if it lived up to Daiya.
The result? Surprisingly melty and cheese like. I would say it is just as good as Daiya if not better and its a little bit cheaper. I wish it was a little less salty, though I always have that complaint about processed vegan cheese. I used some leftover artichoke lemon pesto I had in the freezer as the sauce. I put a thin layer of kale leaves on top of the pesto, as well as a sprinkling of lentils. Putting leafy greens and lentils underneath the cheese prevents it from burning. For the crust, I made it from scratch using whole wheat flour and “pizza crust yeast”. I just followed the directions on the back of the yeast packet. It was so easy! Totally going to be making my own crust from now on.
Mmmm…melty cheesy vegan goodness :)
Go buy ALL the slices so they have no choice but to offer vegan options 24/7!

Pizza party, all the time! Well, at least on Sundays in the Mission. We got a tip from an Escape From New York Pizza employee that their Mission location serves vegan slices from 11 a.m. to 5 p.m. on Sundays. Get on it, their pizza is yum!
I live next to the Escape From New York in the Upper Haight and I would love to see this happen there, because when I want their Daiya cheese pie, I have to order a WHOLE ONE. The vegan slices at Whole Foods across the street always look kind of nasty, so I end up making a vegan pizza myself, or breaking down and ordering one from EFNY. Then I eat the entire thing because will power is not something I apply to in my life!
When I say “I live next to,” I mean “when I open my bedroom window, the breeze is pizza-scented.” This must be what heaven smells like.
